Cannellini Bean and Pinto Bean Kale Soup with Soyrizo and veggie broth - Vegan, Gluten Free, Dairy Free
Both are great soups to make on a cold winter day. Feel free to use any kind of bean you enjoy. I've tried different beans each time I make the soup and all have added their own yumminess
Soak the beans over night or for at lease 4 hours before cooking. I do not use canned beans. You can to save time however it's not as heathy.
I add seaweed (Kombu works) to my beans to cut down on the gaseous aftermath.
Boil the beans and seaweed for 20 minutes, then reduce heat and simmer for 2 to 4 hours depending on the beans and thier recommended times.
In a Staub Dutch Oven or 5 quart heavy pot, cook your soyrizo or chicken sausage.
Once fully cooked, remove the sausage from the pot and transfer to a plate. Leave any rendered fat in the pot.
Do not clean the pot, add onions and oil and cook on high-meduim heat for 3 minutes.
Add carrot, celery and spices - cook for about 5 to 10 minutes on medium heat. After the veggies had some time to cook, add the broth (vegan or chicken).
Bring soup to a boil then add beans and sausage. Stir the pot.
Chop up a pound or more of kale (if you have time, de-rib or de-stem the kale)
Reduce the heat to medium-low and add the kale. Cook covered for a couple of hours on low heat, stirring occasionally.
1/2 lb mild Italian Sausage or one package of soyrizo (remove the casing if using soyrizo. My friend Stacey recommend Field Roast Sega and Apple soyrizo.
2 tablespoons olive oil
1/2 medium yello onion, cut into small dice (3/4 cup)
1 or 2 celery ribs, cut small
4 large garlic cloves, minced
1 or 2 carrots
1/8 teaspoon crush red pepper flakes
1/2 teaspoon kosher salt
1/4 fresh ground black pepper
48 ounces broth (Edward and Sons Not-Chick'n) or Organic Chicken broth. I used my homemade chicken broth
2 cups cooked beans (cannellini, Lima, Pinto or what ever you enjoy)
1 lb Kale, stems removed
